More than two decades after it first opened in Marunouchi, Sens & Saveurs begins a new chapter this October as Jardin des Sens Tokyo.
This is not a break with the past but an evolution, one that carries forward the spirit and philosophy of the Jardin des Sens in Montpellier and gives them new expression in Tokyo.
Jacques and Laurent Pourcel’s cuisine evokes the light, winds and fragrances of the Mediterranean with a sensibility that effortlessly expresses its natural bounty. In Tokyo, that sensibility meets the rhythms of Japan’s seasons in a French cuisine rooted in the local terroir.
Beautiful colours, exquisite aromas, a harmony of flavours, delicately lingering aftertastes… Dish by dish, the senses unfold, like flowers in a Garden of the Senses.

The Pourcel Brothers — a new chapter unfolds in Tokyo THE CHEFS

Jacques & Laurent Pourcel
Twin chefs Jacques and Laurent Pourcel opened Le Jardin des Sens in Montpellier in 1988, at the age of just 23. Their cuisine, gave delicate expression to the light and breezes of the Mediterranean and the abundance of the terroir through the seasons. Combining masterful culinary technique with lightness of touch, it became known as Pourcel Cuisine, inspiring chefs around the world. With a focus on the terroir and local ingredients, the Pourcel brothers continue to create dishes that are fitting expressions of time and place, simple, yet profoundly appealing to the senses.
The Jardin des Sens closed its doors in 2016, but was reborn in 2021 at the Hôtel Richer de Belleval, a magnificent 17th-century mansion. In this setting where history and modernity come together, the brothers’ cuisine continues to evolve, embodying their spirit of exploration.
This autumn, the scene moves to Tokyo as a new chapter of the Jardin des Sens begins.
The spirit of Montpellier, reimagined for Tokyo THE SPACE

Christian Collot
Jardin des Sens Tokyo’s décor is the creation of Christian Collot, the interior designer behind Le Jardin des Sens in Montpellier.
In designing spaces across France and beyond, Collot’s maxim has always been to ‘make spaces, and life itself, beautiful, as if by magic’. Through delicate layering of colour, materials and ornament, he brings new expression to the memories preserved in architecture.
For the new Jardin des Sens at the Hôtel Richer de Belleval in Montpellier, he has set contemporary art and soft colours in dialogue with the 17th-century architecture, creating a showcase befitting the Pourcel brothers’ cuisine. Past and present, architecture and art, cuisine and space come together to shape a world that engages all the senses.
In Tokyo, Collot carries forward the spirit of the parent restaurant while fashioning an extraordinary and elegant space that thrills visitors and fills those who work in it with pride.
The doors of Jardin des Sens Tokyo open soon. We look forward to welcoming you.
In February 2026, Christian Collot and Olivier Château, director of the Jardin des Sens in Montpellier, visited Tokyo, immersing themselves in the city as their vision for Jardin des Sens Tokyo took shape.
